Tableau prep is a bit different to Alteryx in many ways and creating a parameter is one of theses differences.
I am using 2022: Week 31 - C&BSCo Preppin' Parameters dataset.
Create a parameter:

On the top of the tableau prep canvas, you can see a little tune icon which is how you will create a parameter
- Issues with Tableau Prep parameter is that it doesn't automatically fill in the values list of your column
- YOU HAVE TO MANUALLY WRITE DOWN THE VALUES OF THE COLUMN YOURSELF!!
Once you have created a parameter you need to filter it by that parameter for it to work.

Changing the parameter:
This bit was a bit confusing at first but to set the parameters as what they are you need to set the parameter!

Select the store and click 'set' -> this will now update the store name.
You have successfully created a parameter in Tableau Prep!
